Farçous

Chop up some greens (4 chards), 1 bunch of parsley, 1 onion and 1 clove of garlic. Add 2 eggs, 4 glasses of milk and 4 glasses of flour. Stir together.

Heat a little oil in a frying pan, pour on the stuffing and make small pancakes. Turn them over when brown.

Serve hot.

 

FOUACE

Stir together 500 g of flour, 100 g of butter, 15 g of baking powder dissolved in a little milk and 3 eggs, then add a small glass of cognac and a few drops of orange blossom for the flavour. Add a little milk to give the mixture more fluidity and set aside for about 12 hours.

Then shape it into a crown on some greaseproof paper, brush with some beaten egg, sprinkle with sugar and then bake at a low temperature.
