Stepping through the door of this welcoming establishment, in the heart of Rodez's historic center, is to immerse yourself in the world of a chef deeply in love with nature, through his inspired and meticulous work with wild flowers and plants. He plays with cooking techniques, flavor combinations, and textures, using herbs that Hervé Busset himself gathers in the surrounding forests and fields. Trained by ethnobotanist François Couplan, this self-taught chef surprises with creative dishes, daring to venture off the beaten path and elevating the local terroir with wild flowers and shoots from the surrounding area.
